Must eat: Eclairs at L’eclair de Genie: Paris

by Chasing a Plate
Proclaimed to be the best éclairs in town by some notable Parisian bloggers, L’Éclair de Génie was a whirlwind pit stop on our last day in Paris.  TBS and I decided to choose three to take back to London with us to share with KA.

L’Éclair de Génie is a sleek, modern shop containing barely more than a glass cabinet displaying the stunning éclairs. The crème pâtissière filled confections with their gleaming icing wink at you from their regimental rows.  We decided to sample a salted caramel, pistachio and orange (I couldn’t resist that green) and a classic chocolate.

They survived the journey home gallantly via a boozy long lunch, a journey on the Eurostar and a trip on the tube.

Whilst I cannot attest to the quality of a Christophe Adam éclair straight from the cabinet, I can say that even after 7 hours of being jostled round in their box, they were absolutely brilliant.  They were light as air, delicate and generously filled with crème pâtissière. The salted caramel mascarpone held a definite hint of beurre sale  (often I find something proclaiming to be salted caramel, just tastes like caramel) and the choux pastry was delicate and light.

The pistachio and orange éclair with its kermit green icing erred more towards citrus than nut.  It was tangy and a nice change from your usual expectation of an éclair.

However the winner on the night was the classic chocolate
éclair. The Madagascan chocolate (64% cocoa) crème pâtissière was rich and velvety.  The icing, chocolate crumbs and chocolate stamp adorning the éclair combined to create the perfect chocolate to choux pastry ratio.

Éclair means ‘flash of lightning’, because they are more often than not devoured quickly.  I can confirm that once out of the box these little suckers didn’t hang around for long.  So aptly named.  Christophe Adam- what a genius.

Good to know:

I’m moving to France soon to teach and do a couple of pastry courses and I so can’t wait to try this place!! Great post 🙂

p.s looks like we have a lot in common, I’m also a Kiwi (from wellington) living in Melbourne and we’ve just started up a blog/site that celebrates Melbourne’s best boulangeries and patisseries, this one’s definitely going to be on our list of must trys. Love your photos!

Hi Cuddly Crumb! Thanks for visiting our site! I just popped over and looked at your blog- loved the pics from the Flour Market- YUM!!! Your move to France sounds exciting and full of possibility- there will be so much pastry to consume 🙂 L’eclair de Genie is definitely worth a visit- could have sampled every eclair in there!
