Whilst I cannot attest to the quality of a Christophe Adam éclair straight from the cabinet, I can say that even after 7 hours of being jostled round in their box, they were absolutely brilliant. They were light as air, delicate and generously filled with crème pâtissière. The salted caramel mascarpone held a definite hint of beurre sale (often I find something proclaiming to be salted caramel, just tastes like caramel) and the choux pastry was delicate and light.
The pistachio and orange éclair with its kermit green icing erred more towards citrus than nut. It was tangy and a nice change from your usual expectation of an éclair.
However the winner on the night was the classic chocolate éclair. The Madagascan chocolate (64% cocoa) crème pâtissière was rich and velvety. The icing, chocolate crumbs and chocolate stamp adorning the éclair combined to create the perfect chocolate to choux pastry ratio.
Éclair means ‘flash of lightning’, because they are more often than not devoured quickly. I can confirm that once out of the box these little suckers didn’t hang around for long. So aptly named. Christophe Adam- what a genius.
