Singapore’s food centres are where you’ll find some of the country’s most beloved dishes alongside Chinese, Malaysian, Indian and Muslim specialties. There are over 100 food centres in Singapore and you must put eating at a food centre on your Singapore itinerary. Old Airport Road Food Centre is one of our favourites. 1. Kopi and Kaya Toast from Toast Hut #01-52

A cup of hot kopi (coffee) and kaya toast is a traditional way to break your fast in Singapore. Kopi is usually served pretty sweet here- ask for kopi-o if you want black coffee with sugar or a kopi-c which is coffee, evaporated milk and condensed milk. It’s almost like eating dessert when you pair it with kaya toast. Kaya is a coconut jam which is ubiquitous in Singapore and Malaysia. Usually flavoured with pandan leaf it is sweet and fragrant. Served slathered on white toast (crusts removed) and with a pat of butter- this is one perfect way to start your day!

2. Hokkien Fried Mee from Nam Sing #01-32

It may not be the most beautiful looking dish but it sure makes up for it in the taste stakes. Hokkien Fried Mee is made up of a mix of yellow noodles and thin rice noodles cooked in a seafood broth together with bean sprouts, freshly blanched prawns, squid, egg and a squirt of chilli on the side. It’s comfort food at its finest and a must eat!

3. Char Koay Teow from Dong Ji Fried Away Teow #01-138

When people talk about char koay teow they often refer to wok hei or the breath of the wok. The char koay teow from Dong Ji is an excellent example of a dish where you can taste the wok hei. It’s smoky- the noodles infused with the breath of the wok. Bean sprouts, spring onions, prawns, juicy clams and sweet lap cheong (Chinese sausage) add life and flavour. The Uncle cooks each dish to order so there can be a bit of a wait if he’s busy. But totally worth it!

4. Oyster Omelette from Xing Ling Cooked Food #01-28

Plump, creamy oysters flash fried in a wok with eggs and spring onion and topped with chilli sauce. It might not be a dish you naturally gravitate towards but it should be!

5. Dessert from Blanco Court Hot and Cold Dessert #01-137

Round off a hawker centre feast with dessert from Blanco Court Hot and Cold Dessert. You’ll find loads of shaved ice concoctions (ais kachang) together with Chinese sweet soups and Malaysian specialties like cendol. Sweet, refreshing and like the tadpole bobo chacha sometimes completely wild!
